There is one day a year that has been deemed the day to express
your love for your sweetheart... Valentine’s Day. And even though the
story of how it got started has many argued origins, St. Valentine, and his
actions regarding lovers, are at the heart of them all. And since the first Valentine was sent (again,
arguably by Valentine himself) the expression of love has come to be many things. In our country, a
wine toast over a great meal may have turned out to be the best cultural evolution of this sentiment.
At The Ranch Las Colinas, Manager Roy Figueroa said that for him and his staff, this is a day to
enhance the memories being made by those dining with them. “We have a very good reputation for
special occasions, and Valentine’s is one of my favorites because so many memories are made on
this day. Once,” he continued, “I had some great regular customers that love old world wines, so
last Valentines Day just happened to also be their 25th Wedding Anniversary, and they ordered the
Surf & Turf. I wanted them to have an exceptional bottle of wine to pair with their meal and selected
the 2006 Sea Smoke “Botella” Pinot Noir. The burgundian style Pinot blew them away. Or the time
when I ordered the Novy Pinot Noir for a couple. They laughed when I returned. We had all
graduaated high school together and she was Diane Novy, owner of the vinyard!”
In case you couldn’t tell by now, Roy is also a “wine guy”. He really knows his stuff when it
comes to flavors and subtlies in pairing a glass of wine so it accentuates the flavors of a wellprepared
meal. That’s nwhy why Mr. Figueroa is in charge of that very concept for the Ranch’s
Valentine’s Day dinner.
